Sodexo (University Dining) Wins People’s Choice for Best Soup in Southern Minnesota  

The Minnesota Valley Action Council (MVAC) held it's Second Annual Warm Your Heart Event at Minnesota State University, Mankato on Saturday, March 8. Executive Chef Jamie Waterbury, the the Minnesota State University Sodexo team won People's Choice for his Butternut Squash with Candied Pecans. All proceeds from the event went towards MVAC's new food hub.

The food hub is and organized business that works with small, local farmers to create a large-scale supply of fresh, healthy food. There are 25 local farmers that are on board and committed to growing food for the new hub. Locally grown food is brought to the food hub and is packaged into large, standard sized quantities and then sold to local institutions and restaurants. The food hub is expected to open in July 2014.
