Soupir Selected as Hunger Fellow
Mara Soupir selected as Campus Kitchens Project CoBank Rural Hunger Fellow for Campus Kitchen at MSU, Mankato
The Community Engagement Office is pleased to announce that Mara Soupir, Mankato, has been selected to serve as a CoBank Rural Hunger Fellow for the Campus Kitchen at Minnesota State University, Mankato. In this role, she will build and develop several community gardens.
Karen Anderson, Interim Assistant Director of Community Engagement is is very pleased that Soupir applied and was selected for the position. "Mara was a natural choice for The CoBank Rural Hunger Fellow position. She is very organized, has personal experience with gardening, and has a passion for addressing hunger issues in our area."
Anderson sought the grant to augment meals distributed by the Campus Kitchen. "Access to fresh vegetables make a huge difference," she explained. Mara will build and develop a garden at the Campus Kitchen location, but also container gardens at the Teresa House and Welcome Inn. The container gardens will augment meals prepared through the "Cooking Matters" classes coordinated by the University of Minnesota Extension.
