Sammie Eckerson, who runs Minnesota State University's Campus Kitchen program, has inked some new partnerships that will allow her program to acquire food from restaurants.
Thanks to a few new partnerships, the Campus Kitchen program at Minnesota State Mankato is about to get a little spicier. And fishier. And doughy-er.
The program is now partnering with Chipotle and Long John Silver’s restaurants for food, and with Panera Bread for cash donations from the restaurant and from customers.
Partnerships such as this, MSU Campus Kitchens director Sammie Eckerson says, not only adds to the volume of food needed to keep pace with its local demand of 350 meals per week, but also adds variety to the meal plan. It also provides protein, which is the most expensive part of the Campus Kitchen meal.
And partnering with Panera has the potential to bring in as much as $5,000 per semester, which is a lot to an organization that perennially must fight for its existence.
Eckerson, who a year ago was unsure whether there’d even be a Campus Kitchen program on campus, said she got a financial boost from the Andreas family last year that helped a lot.
