Pita Pizza
- Nonstick cooking spray
- 1/2 boneless, skinless chicken breast (cut into 1⁄2 inch cubes)
- 1/2 cup thinly sliced red bell pepper
- 1/2 cup thinly sliced mushroom
- 1/2 cup thinly sliced red onion (about 1 small)
- 2 cloves garlic, minced
- 1 tsp basil
- 1/2 tsp oregano
- 1 cup torn, fresh spinach leaves
- 6 mini whole wheat pita breads
- 1/2 cup (2 ounces) shredded part-skim mozzarella cheese
- 1 Tbsp grated parmesan cheese
Instructions
Preheat oven to 375 degrees F. In a medium skillet (sprayed with cooking spray), cook chicken cubes for about 6 minutes or until browned (no pink inside). Remove from skillet.
