Pita Pizza

  • Nonstick cooking spray
  • 1/2 boneless, skinless chicken breast (cut into 1⁄2 inch cubes)
  • 1/2 cup thinly sliced red bell pepper
  • 1/2 cup thinly sliced mushroom
  • 1/2 cup thinly sliced red onion (about 1 small)
  • 2 cloves garlic, minced
  • 1 tsp basil
  • 1/2 tsp oregano
  • 1 cup torn, fresh spinach leaves
  • 6 mini whole wheat pita breads
  • 1/2 cup (2 ounces) shredded part-skim mozzarella cheese
  • 1 Tbsp grated parmesan cheese

Instructions

Preheat oven to 375 degrees F. In a medium skillet (sprayed with cooking spray), cook chicken cubes for about 6 minutes or until browned (no pink inside). Remove from skillet.
