Black Bean Salsa

  • 1 each chopped sweet red pepper, green pepper, yellow pepper
  • 1 chopped red onion
  • 2 tsp minced garlic
  • 2 cans black beans (drained and rinsed)
  • 1 can Rotel tomatoes (with chilies)
  • 1 to 2 cups frozen corn
  • 1/2 cup lime juice
  • 1/4 cup olive oil
  • 1 tbsp cumin
  • A dash or two hot sauce
  • Salt and pepper to taste, try a no-sodium product
Instructions
  1. Mix together-best to refrigerate overnight, but okay to use right way.
