Black Bean Salsa
- 1 each chopped sweet red pepper, green pepper, yellow pepper
- 1 chopped red onion
- 2 tsp minced garlic
- 2 cans black beans (drained and rinsed)
- 1 can Rotel tomatoes (with chilies)
- 1 to 2 cups frozen corn
- 1/2 cup lime juice
- 1/4 cup olive oil
- 1 tbsp cumin
- A dash or two hot sauce
- Salt and pepper to taste, try a no-sodium product
Instructions
- Mix together-best to refrigerate overnight, but okay to use right
way.
