Easy Veggie Salsa

  • 2 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 can black-eyed peas, drained
  • 1 can red kidney beans, drained
  • 1/2 cup chopped cilantro
  • 1/2 cup diced red bell pepper
  • Juice from 2 limes
  • 1/2 diced red onion

Dressing

  • 1/2 cup balsamic vinegar
  • 2 tbsp sugar*
  • 1/3 cup consorzio mango fat-free dressing to taste

Instructions

  1. Mix all ingredients together, except dressing
  2. In a separate bowl, mix dressing. Pour over te salsa and toss to coat

*Try a sugar substitute in place of white sugar.
