Lemon Crisp Cookies

  • 1 pkg (18 1/4 oz) lemon cake mix
  • 1 cup Rice Krispies
  • 1/2 cup melted butter*
  • 1 egg, beaten*
  • 1 tsp grated lemon peel


  1. In a large bowl, combine all ingredients until well mixed (dough will be crumbly). Shape into 1 inch balls, Place 2 inches apart on ungreased baking sheets.
  2. Bake at 350 degrees for 10 to 12 minutes or until set. Cool for 1 minute; remove from pan to a wire rack to cool completely. This recipe makes about 4 dozen cookies.

*Substitute butter with a trans-fat free product, Lighter Bake or pureed fruit such as applesauce. Replace the egg with an egg substitute or egg whites.
