Lemon Crisp Cookies
- 1 pkg (18 1/4 oz) lemon cake mix
- 1 cup Rice Krispies
- 1/2 cup melted butter*
- 1 egg, beaten*
- 1 tsp grated lemon peel
- In a large bowl, combine all ingredients until well mixed (dough will be crumbly). Shape into 1 inch balls, Place 2 inches apart on ungreased baking sheets.
- Bake at 350 degrees for 10 to 12 minutes or until set. Cool for 1 minute; remove from pan to a wire rack to cool completely. This recipe makes about 4 dozen cookies.
*Substitute butter with a trans-fat free product, Lighter Bake or pureed fruit such as applesauce. Replace the egg with an egg substitute or egg whites.
