Cuban Black Beans with Rice
- 2 tbsp olive oil
- 1 diced onion
- 1/2 diced green pepper
- 1/2 diced red pepper
- 2 minced garlic cloves
- 1 tsp salt, try a no-sodium product
- 1 tsp ground cumin
- 2 cans black beans
- 1 tsp vinegar
- 2 cups water
- In a large saucepan, heat olive oil and add first 4 ingredients. Saute a few minutes.
- Add beans, water, vinegar, salt and cumin.
- Stir and cook until thick sauce consistency. Serve over cooked brown or white rice.
