Cuban Black Beans with Rice

  • 2 tbsp olive oil
  • 1 diced onion
  • 1/2 diced green pepper
  • 1/2 diced red pepper
  • 2 minced garlic cloves
  • 1 tsp salt, try a no-sodium product
  • 1 tsp ground cumin
  • 2 cans black beans
  • 1 tsp vinegar
  • 2 cups water

Instructions

  1. In a large saucepan, heat olive oil and add first 4 ingredients. Saute a few minutes.
  2. Add beans, water, vinegar, salt and cumin.
  3. Stir and cook until thick sauce consistency. Serve over cooked brown or white rice.
