Crockpot Steel Cut Oatmeal
- 2 cups Steel Cut Oatmeal
- 1 cup ground flaxseed
- 1 tsp vanilla
- 1/2 tsp salt
- 6 T sugar or 8 servings sugar substitute such as Aspartame, Stevia, etc
- 7-8 cups water (7 cups will yield a chewier oatmeal while 8 cups will yield a creamier oatmeal.)
- 1 T cinnamon, pumpkin pie spice, or other spices
- 2 cups of fruit, such as cooked apple slices, pureed pumpkin, smashed/chunked bananas, etc
- 1/2 cup chopped nuts
Assemble and incorporate all ingredients in a large Crockpot. Cook on High 3-4 hours.
I like to make a pot of this oatmeal and divide it up for my breakfasts. I refrigerates well. Just heat it up in the microwave and eat! The recipe is so flexible that you can make changes and additions to suit your own personal tastes and dietary needs.
