Black Bean Brownies
- 1 box brownie mix
- 1 can black beans
- 6 oz vanilla yogurt* replace with lighter or fat-free yogurt
- 1 tsp vanilla extract
- 1/4 cup water
- Pour black beans into a strainer and rinse.
- In blender, blend rinsed black beans, yogurt, vanilla extract and water on high for 2 minutes.
- Combine black bean puree and brownie mix in large bowl. Pour batter into pan and bake as directed on brownie box.
