Fat Free Irish Soda Bread

  • 2 eggs (use egg-beaters to equal 2 eggs)
  • 2 cups flour
  • 1/4 cup sugar
  • 4 teaspoons baking powder
  • 1 teaspoon baking soda
  • Pinch of salt
  • Caraway seeds to taste
  • Raisins to taste
  • 1/2 pint fat free sour cream


Mix all ingredients, adding caraway seeds and raisins last.  Use a loaf pan, spraying the bottom with fat free cooking spray.  Add the mixture to the pan.  Pre-heat oven at 500 degrees for 5 minutes, then put bread in and turn down oven to 300 degrees.  Cook for 45 minutes.  Check to see if center is cooked, may have to extend 5 to 10 minutes more, as every oven is different.  The bread can be sliced and put in the freezer.  Great for toasting, too.
